Provençal Dijon Sardine Salad

Inspired by French country cuisine, this salad with mustardy sardines, baby potatoes, egg, olives, roasted peppers, and fresh herbs gets that proverbial “chef’s kiss”!

INGREDIENTS

  • 1 can King Oscar Sardines in Dijon Mustard
  • 1 lb baby potatoes, halved or quartered
  • 1/4 lb green beans, trimmed and cut into bite-sized pieces
  • 3 tbsp sliced green olives
  • 1/4 cup jarred roasted peppers, drained and sliced
  • 2 tbsp chopped fresh herbs (parsley, thyme, oregano)
  • 2 boiled eggs, quartered
  • Black pepper

HERE’S WHAT YOU DO...

  1. Boil potatoes and green beans until tender. Drain, rinse with cool water and set aside.
  2. In large bowl, add cooked potatoes, green beans, olives, bell peppers, and fresh herbs.
  3. Fold in sardines, including Dijon mustard sauce from can.
  4. For serving, top potato salad with boiled eggs and black pepper, to taste.
