Mediterranean Mackerel with Roasted Butternut Squash & Farro

With nutty, earthy flavors, rich textures, and the goodness of high-quality protein and omega-3s, this recipe is amazing as a light meal and perfect as a show-stopper side dish!

INGREDIENTS

  • 1 can King Oscar Mackerel Fillets Mediterranean Style, reserve oil
  • 1/2 cup farro, cooked to package instructions
  • 1/2 butternut squash, peeled, seeded, and cubed (about 2-3 cups)
  • 1/4 red onion, sliced
  • 1 bell pepper, seeds removed and sliced
  • 3 cloves garlic, sliced
  • 1/2 tsp kosher salt
  • 1/4 cup chopped parsley
  • Salt
  • Black pepper

HERE’S WHAT YOU DO...

  1. Pre-heat oven to 400°F.
  2. Add squash, red onion, and bell pepper gathered to middle of sheet pan. Drizzle reserved oil, garlic, salt, and pepper over vegetables. Stir to combine.
  3. Spread vegetables in single layer and roast for about 25-30 minutes or until veggies are cooked.
  4. When veggies are cooked, combine with cooked farro and mackerel.
  5. Garnish with chopped parsley. Season with salt and black pepper, to taste.
