Sardine & Spinach Pasta Salad

Inspired by the Mediterranean diet, this versatile, flavor-packed pasta salad can be served warm or chilled – either way, it makes a great light meal or side dish!

INGREDIENTS

  • 1 can King Oscar Skinless & Boneless Sardines in Olive Oil, reserve oil
  • 8 oz pasta, cooked to package instructions
  • 1 clove garlic, minced
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh lemon juice, extra lemon wedges for serving
  • 1/2 cup peas, from can or thawed from frozen
  • 1 cup cherry tomatoes, quartered
  • 4 oz feta cheese
  • 1 cup chopped spinach
  • 2 tbsp chopped fresh dill
  • Salt
  • Cracked pepper

HERE’S WHAT YOU DO...

  1. In large bowl, combine minced garlic, reserved oil, balsamic vinegar, and lemon juice.
  2. Stir in cooked pasta, peas, tomatoes, cheese, spinach, and dill.
  3. Gently fold in sardines.
  4. Season with salt and pepper, to taste.
