Mediterranean Mackerel with Roasted Butternut Squash & Farro

HERE’S WHAT YOU DO...
- Pre-heat oven to 400°F.
- Add squash, red onion, and bell pepper gathered to middle of sheet pan. Drizzle reserved oil, garlic, salt, and pepper over vegetables. Stir to combine.
- Spread vegetables in single layer and roast for about 25-30 minutes or until veggies are cooked.
- When veggies are cooked, combine with cooked farro and mackerel.
- Garnish with chopped parsley. Season with salt and black pepper, to taste.
