Roasted Cracked Pepper Sardines with Tomato & Herbs

So easy, so delicious! Bold aromatic flavors and protein-packed goodness make this the perfect healthy snack, novel appetizer, or centerpiece side dish!

INGREDIENTS

  • 1 can King Oscar Sardines in Extra Virgin Olive Oil with Spicy Cracked Pepper, drained
  • 1/4 red onion, minced
  • 4 oz cherry tomatoes, halved
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp chopped fresh thyme
  • 2 cloves minced garlic
  • 4 slices lemon
  • Salt, to taste
  • Toasted baguette or pasta

HERE’S WHAT YOU DO...

  1. Pre-heat oven to 425°F.
  2. In bowl, combine red onion, tomatoes, herbs, garlic, lemon slices, and salt.
  3. Gently toss sardines into mixture. Spread in single layer in baking dish.
  4. Roast for about 15-20 minutes or until tomatoes are soft.
  5. Serve with toasted baguette slices or serve over pasta.
